When it comes to snacking I’m pretty good at avoiding the bad stuff. I tend to snack more on fresh fruit or natural protein bars. I’m a big fan of the Trek Berry Burst, and stay well clear of the sweetie aisle whenever I’m shopping. This is probably because I’ve never really had that much of a sweet tooth. I’ll always be a savoury girl, give me a great big bag of salty Kettle Chips any day! That being said when the cravings for something sweet kicks in nothing else will do.
One of my favourite sweet treats is definitely ice cream. It reminds me of hot summer days on holiday or cosying up for movie night when I first met Jack at uni. I thinks there is something so refreshing about frozen snacks and hot or cold I’m always in the mood for ice cream when the sugar craving hit. Banana ‘ice cream’ is a fantastic alternative to the real thing. It’s much healthier and tastes sooooo good, with the added benefit of being super quick and easy to make.
- 3 frozen Bananas
- Large handful of frozen mixed berries
- 1 Tbsp of runny honey
- 100ml of milk (almond, coconut or cows)
Add all the ingredients to a blender and blend until you have a thick smooth consistency. Add more milk to blend if necessary making sure to do this a little at a time as you don’t want it to go too runny. I used the Nutri Ninja blender though this will work much better in a blender where you can push the ingredients down, meaning you’ll need less milk and can make a much thicker ice cream like dessert.
The nice cream can be eaten straight away or kept in the freezer for up to two weeks.
